The Zialena winemaking style can best be described as minimalist and traditional, as we encourage the fruit to express itself with little intervention from the winemaker. All of our grapes are hand sorted and gravity fed into small concrete tanks where native fermentations begin when the time is right. The use of concrete for fermenting dates back hundreds of years in Europe, and provides a structure and depth to the wines that is unique to concrete, and to Zialena. Once fermented, the wine is aged primarily in neutral French oak to provide richness without overwhelming the delicate aromas and flavors of the wine. We strive to keep our wines unfiltered and unfined, where they can evolve naturally in barrel. Once bottled, Zialena wines can age gracefully for decades.
